Ideal pairings are stuffed pasta with spicy sauces, stews, and braised game. It can also match with aged Pecorino or marbled cheeses. The wine ages for 12 months in mostly large-format oak, followed by six months in the bottle. Ideal with stuffed pasta or delicate meat sauce, lamb, Pecorino cheese.
